FLORIDA RAISED

EVERYONE’S INVITED
From Passion project to Fresh, Bold Bowls
Chris Gannon didn’t set out to open just another restaurant. He wanted to create a place that made eating well feel like the best part of the day. Together with his father and cofounder, Tim Gannon, who co-founded Outback Steakhouse in 1988, Chris spent years listening, researching, taste-testing and experimenting. The result was Bolay: fresh, bold bols with the kind of flavor you crave and the kind of welcome you remember.
The first Bolay opened in Wellington, in Palm Beach County, in 2016. Today there are Bolay restaurants across Florida, with more on the way.
Today our menu is 100% gluten-free and made fresh daily, and every guest can build their bol just the way they like it. Even our name is a celebration: our signature “bol” plus “Olé!”
“When we created Bolay, it was to bring something truly unique and different to the marketplace.”

CEO and Founder

beyond the bowl: giving Back Across Florida
We believe in leaving our communities better than we found them, and that goes well beyond our kitchen.
Life’s Too Short for a Boring bol
Eating well should feel joyful, colorful and worth sharing, never restrictive. That’s why every bol starts with fresh ingredients and finishes with a bold sauce. Every item is 100% gluten-free, and every base, veggie and sauce is vegan, so there’s plenty to explore. We stay curious, keep it fresh and never stop creating.
